1 pound bacon, cut into 1/2-inch pieces and fried, reserve 2 tablespoons fat
1 med. onion, diced
2 pounds sauerkraut, rinsed and squeezed
2 pounds smoked Polish sausage, cut into 1 1/2-inch pieces
1/2 cup apple juice
1/4 cup packed brown sugar, more or less to tate
2 Granny Smith apples, peeled, cored and sliced 1/2 inch thick
1 tablespoon caraway seeds (optional)

Fry the bacon in a large soup pot. Drain the bacon on a paper towel. In the same pot, add the onion, brown 'til translucent. Add 1 tabl. flour and make a roux with the flour & onion. Then add the can of sauerkraut, mix altogether. Transfer the sauerkraut mixture, diced apple and all other ingredients in a crock pot. Cook on low 3-5 hours.
