BASIC TOMATO SAUCE

This is the sauce for the Eggplant or Chicken Parmesan, also good on pasta or as pizza sauce.

2 28 ounce cans whole peeled tomatoes in juice
1 ¾ cup chopped onion
4 large cloves garlic
¾ cup shredded peeled carrot
3 TBL chopped fresh thyme or 2 tsp dry

3 TBL sliced fresh basil, to sprinkle on dish before serving

Directions:
Makes about 5 cups, Heat oil in large sauce pan, over med high heat, add onion and garlic and sauté until soft and starting to brown about 8 minutes. Add tomatoes and mash with a fork or potato masher. Reduce heat and simmer for about an hour and sauce thickens, salt and pepper to taste.
