Olive Oil Spray
1 Red Onion, finely sliced
2 tsps Crushed Fresh Garlic
2 tbsp Sakims Thai Red Curry Past, Medium-Hot
4 Skinless Chicken Breast Fillets
400ml Can A Taste of Thai Lite Coconut Milk
140ml Can Coconut Cream
375g Baby Beans, trimmed
Cup Fresh Coriander Leaves or 1 tbsp chopped Bottled Coriander
Steamed Rice and Poppadums to serve

1. Spray a large wok or pan with olive oil. Place over a high heath, add onion and garlic, cook for 2 mins. Add curry paste and cook for a further 1 min.
2. Stir in chicken, coconut milk and cream, reduce heat and simmer for 15min, or until chicken is tender
3. Toss through beans and coriander, cook a further 3 min. Serve with steamed rice and poppadums.
