Oven Baked Onion Soup Recipe

4 T butter
6 c thinly sliced yellow onions
2 T flour
6 c beef broth
1/2 c dry white wine
1/2 t salt
1/2 t pepper
3 T brandy
6 slices French bread, toasted
6 slices Gruyere cheese
1/2 c fresh Parmesan grated

Melt butter in large soup pot. Add onions and saute' over medium heat til lightly browned. Add flour and blend. Stir in beef broth, wine, salt and pepper. Bring to a boil. Reduce heat and simmer 10 mins. Remove from heat and add brandy.
Preheat oven to 375. Place slices of bread in bottom of 6 oven proof soup bowls. Ladle soup over bread, top with Gruyere and sprinkle with parmesan. Bake til cheese melts, about 5 mins.
