So good with the Prime Rib or Steak

3 TBL butter
¼ cup flour
2 ½ cups whole milk
Sea salt
½ tsp nutmeg. Fresh grated is best
2 pounds clean spinach tough stems removed.
1 large egg plus 2 egg yokes, whisked together

Directions:
Melt butter in a sauce pan over med heat, whisk in flour stir until smooth and starts to bubble and lighten about 1 minute. Whisk in the milk quickly add 2 tsp sea salt and the nutmeg, stir constantly and bring it to a boil, remove from heat and set aside, cooling slightly.

In a deep skillet put spinach and about 2 TBL water and 1 tsp salt, cover and cook until spinach is wilted, uncover and cook about 2 more minutes. Drain in colander and cool slightly, squeeze out water until moist/dry, chop coarsely.

Gently reheat sauce, and whisk in the beaten eggs, cook until the sauce thickens, stir in the spinach and heat through, Salt and pepper to taste.
