Serve with roast beef or even steak. I remember eating this first at my Great Grandmothers, she was so very English. My mom made it too but she poured it around the cooked roast,and baked it all together the pudding was extra yummy but the roast was usually over done and dry.

You will need a large cup muffin pan for this

1 cup flour
1 tsp salt
1 cup milk
3 eggs
Beef drippings, or beef broth, or Vegetable oil

Directions:
Directions:
Put all but beef drippings or oil in a blender of food processor and blend well.

Preheat oven to 400. Pour 1 TBL beef dripping or oil in 8 large muffin cups, Spoon batter in 8 muffin cups, about ½ full and bake for 25 minutes, until very puffed and golden brown. They will sink when you remove them from the oven. Serve immediately, top with a dab of butter and beef gravy. Better make 2 for each person! SAFETY NOTE: If you fill 8 cups with the drippings and don't have enough batter to put on top of all the drippings the cups with just the oil or drippings may get so hot they start a fire. Best to fill one cup at a time, first with drippings, then the batter. Or sop up the oil with a paper towel before baking.
