Ingredients: approx. 60 oz of beef broth (can adjust up or down desired thickness of broth to veggies) 2 lg cans (each 29 oz) stewed tomato, 1 head of cabbage - chopped, 1 lb carrots - sliced, 1 lg onion - chopped, 1 lg green pepper- chopped, 1 md sweet red pepper - chopped, few stalks of celery -chopped, few stips of precooked bacon - cut up, 4 tablespoons olive oil, 3 bay leaves, seasoning, hot sauce, cayenne pepper, or Cholula to your taste.

Directions:Preheat oven to 375, In large roaster combine cabbage, carrot, onion, sweet red pepper, green pepper, celery and cut up bacon. Pour approx 20 oz of beef broth over veggies and drizzle olive oil over top. Cover and roast in oven for 2 1/2 to 3 hours (varies by oven). Stir at approx. 30 minute intervals watch near the last 30 - 45 minutes so not to burn veggies. After veggies are done roasting, add to large stock pot with stewed tomato and remainder of beef broth (adjust broth to desired thickness of your soup) I like a thick and hearty soup and only use about 48 oz of broth. Add bay leaves. Season with salt,pepper, hot sauce as to your taste. I generally stay light on the hot sauce and add a few squirts of Cholula (chili garlic) to my bowl rather than to the pot. Stew the pot of soup on low for a couple of hours to blend the roasted flavor with the broth. You should know the rest of the drill from here. If not you are probably too stupid to be in the kitchen and should pick up a book on 'Cooking for Dummies'. Just kidding on the stupid part. |

Notes: This is a home grown recipe the evolved after repeating the 7 day cabbage soup diet. Chicken broth works too and for some may be preferred. This roasted veggie approach works good for other soups for a change of pace.
