2 pkg. frozen chopped spinach, thawed and well drained
2 c. herb seasoned Pepperidge Farms bread crumbs
1 small can water chestnuts, chopped fine
1 medium onion, chopped fine
5 eggs, beaten
3/4 c. margarine or butter
1/2 - 3/4 c. Parmesan cheese

Directions:

Mix all ingredients and shape into small balls. Place on baking sheet and bake at 350º for 20 minutes.

A nurse at work used to bring these to our covered dish parties. I have since taken them to other covered dish parties and have had several requests for the recipe. I take them to Mom's for Christmas eve. We get together and exchange gifts; but mostly snack on deer balogna, cheese balls and dips, spinach balls, cake, and whatever anyone decides to bring. (And there is always punch and wine.)
