Remove meat from turkey carcass and set aside. Crack bones and place in pot, including skin, several stalks of celery, 1 carrot, 1 onion, 6 peppercorns, 1/4 bay leaf, 4 whole cloves, 1 tsp. thyme, 1 tsp. rosemary, and three sprigs parsley. Cover with water. Simmer on low heat for 2 hrs. Cool slightly and strain broth mixture. Return prepared turkey meat to broth. add vegetables such as diced potatoes or noodles if preferred, carrots, celery, etc. Add 1 heaping tablespoon Spice Islands Chicken Broth seasoning for richer soup.
