Take 2 baked potatoes and cut out an oval of skin in the top of each potato. Scoop out the inside of the potato with a spoon leaving a potato boat. Mash the potato with a little milk or cream, mix with one cup crab meat and 2 tablespoons chopped green onion, including green tops, salt and pepper to taste. Fill each potato with this crab filling and top with 1 tablespoon cheddar cheese on each potato.

Heat in 350º oven until the cheese melts. Serve hot.
