3-4 lb. Roast Beef, round or chuck
1 can Beef Chili with Beans
1 can Green Chiles, diced
1 Onion, chopped
1 or 2 cans Taco Sauce, depending on size
1/2 tsp. Salt
1/2 tsp. Pepper
Cheddar Cheese, grated
Sour Cream
Tortillas, large
Enchilada Sauce
Lettuce

Directions:
Directions:
In a large kettle, simmer the beef roast in 1 to 2 c. water until very tender. Shred the beef and use the broth to make the meat very moist. Add the chili, diced green chiles, onion, taco sauce, salt and pepper to taste. Simmer for an hour. Scoop beef mixture onto tortilla shell, fold over ends and roll up. Place in a 9 x 13-inch baking dish and heat in 325º oven for 15 minutes. Serve with warmed enchilada sauce, cheese, sour cream and shredded lettuce.
