White Chicken Chili Recipe

3-4 boneless skinless chicken breasts
2 - 14 1/2 oz cans chicken broth
1 1/2 tsp. white pepper
1 tsp. garlic powder
3 T. vegetable oil or olive oil
2 - 15 oz cans great northern beans
2 - 4 1/2 0z cans green chilies diced
1 - 10 1/2 oz can cream of chicken soup
3 T (or less, to taste) jalapeņo pepper juice ( I
usually don't add this)
2 T. minced cilantro
1 tsp. salt

Directions:
Directions:
Put chicken breasts in a glass baking dish with one can of chicken broth, cover with foil and bake at 350 for one hour. Remove chicken and reserve broth. Cut chicken into small pieces, season with garlic and white pepper and saute in oil in a *stock pot for 2 - 3 minutes. Add beans, reserved broth plus second can of broth, chopped green chilies, cream of chicken soup, jalapeņo pepper juice, cilantro and salt. Bring to a boil. Reduce heat and simmer for 30 minutes.

Garnish with tortillas cut into strips and toasted, sour cream and mozzarella cheese, if desired.

*I usually make this in the crockpot. I start it either in the morning or at lunch time and cook it on low until we are ready to eat it in the evenings.
