1/2 c. shortening
2 c. brown sugar
Grated rind of one lemon
1 egg
2 c. flour
1 tsp. salt
1 tsp. baking soda
2 c. creamed cottage cheese
1 c. raisins

Directions:
Directions:
Cream shortening and 1 cup of brown sugar until light and fluffy. Add lemon rind and egg, beat well. Add cottage cheese and 2nd cup of brown sugar and mix thoroughly. Blend together flour, salt and baking soda. Add cottage cheese mixture to flour mixture. Fold in raisins. Bake in muffin pans at 350º for 30 minutes or until done. Makes about 2 dozen cupcakes.
