12 fresh mushroom caps, stems removed,
2-3 T melted butter, salt & pepper
3T finely minced onions, 2 T butter, 1 T oil. 3T minced onions, 3T fine seasoned dry bread crumbs, 1/4 c. grated swiss, 1/4 c. grated parmesan, 4 T minced parsley, 1/2 tsp. tarragon, 2-3 T whipping cream (or milk), 3 T grated swiss, 2T melted butter

Brush mushroom caps with melted butter. Place, hollow side up in a pan. Sprinkle lightly with salt & pepper. Saute in butter and oil minced onions, mushroom stems finely minced (with juice squeezed out) . Boil rapidly until most liquid is evaporated. Off Heat: mix in with the stem mixture bread crumbs, grated swiss, grated parmesan, parsley, tarragon and add whipping cream or milk 1 T at a time.

Fill caps with stuffing. Top each with pinch of swiss cheese . Bake in Preheated oven 375 º 15-20 min.. until caps are tender.
