1 egg white 1 lb. pecan halves 2 tsp. cinnamon 1 cup sugar 1 tsp. salt
Beat one egg white until it is stiff. Add 1 pound of pecan halves and stir until folded well into the egg white. Mix together 1 cup sugar, 1 tsp. salt, and 2 tsp. cinnamon. Add the sugar mixture to the pecan mixture and stir well. Spread in a 9 X 15 pan and bake in the oven at 250º until coating looks done. Stir every 15 minutes. Let cool and put into container.
