1-1/2 cup milk
1/2 cup biscuit mix
3 eggs, lightly beaten
1/4 teaspoon salt
1/8 teaspoon pepper
dash of nutmeg
1/2 to 1 cup any cooked vegetable, chopped
3/4 cup any variety cheese, shredded
1/3 cup onion, chopped

Directions:

Lightly spray pie plate with cooking oil spray. Beat milk, eggs, salt, pepper and nutmeg until smooth and pour into pie plate. Sprinkle vegetables and cheese over egg mixture. Bake at 400 º for 30 minutes until golden brown and knife insered near center comes out clean. Let it stand 10 minutes before serving, if seving fresh or wrap pie plate, label and freeze.

Quiche can be served cold after thawing or heat the thawed quiche at 350º for 20 minutes.

You can use whatever veggies or cheese you have on hand or a combination of different ones. Also, you can add 1/2 cup to 1 cup of meat, if desired. Tasty hot or cold!
