1/2 cup sugar
3 rounded T flour
pinch of salt
2 cups milk
3 eggs, separated
1 cup coconut
1 tsp vanilla
2 T butter
Directions:
Directions:
Mix sugar, flour, pinch of salt and add milk gradually. Bring to a boil, cook until thick stirring constantly. Add beaten egg yolks*, remove from heat and add coconut, vanilla and butter. Make meringue with egg whites.

*Always add some of hot mixture to yolks and blend before adding to hot mixture.
