2 eggs
2 T water
1/4 cup chopped ham
1/4 cup chopped bell pepper
1/4 cup chopped green onion
1/4 cup monterey jack cheese shredded
2 T butter

Directions:
Directions:
In an omelet pan or small skillet, melt the butter on med heat. Saute ham, bell pepper, and green onion, until a little brown on the edges. Remove to a small bowl, keep warm. Pour the eggs into the pan and swirl to coat the bottom. Push the cooked eggs to the center until no more egg runs to the edge. Add the cheese and vegetables, cook until eggs are set. Fold one half over the other, slide out onto a plate and eat.
