1 C Rice
1 Yellow onion, chopped (I usually do about half an onion)
3 T Vegetable Oil
1 Garlic Clove, chopped (optional)

Directions:
Directions:
Saute rice, onion, oil and garlic until rice becomes golden brown.
Add to rice mixture:
2 C liquid (water and/or chicken broth)
1/2 C tomato sauce or salsa

Bring to a boil. reduce heat to low, cover and simmer until liquid evaporates and the rice is cooked.

I love this rice, it's easy and yummy. We almost always have it with our enchiladas.
