1 unbaked pie shell
1 tbsp. margarine
small onion - thinly sliced
1 cup swiss cheese - grated
4 eggs
2 cups cream or milk
1/2 tsp. salt
1/2 tsp. pepper
1/3 cup ham - italian sausage - etc. diced (optional)
1 pkg. frozen spinach - chopped (optional)

Prick bottom of crust with fork. Bake at 350º for 5 minutes, remove from oven, prick with fork again, and bake 5 minutes more. Put in freezer for 1 hour.
Saute onions in margarine until transparent. Place meat (if using) on bottom of frozen crust. Sprinkle cheese, then onions. Beat eggs, milk, and seasoning. If using spinach, cook and drain thoroughly. Press out excess water and drain on paper towel add at this time. Mix well. Pour on top of onions. Bake at 350º for 30 to 35 minutes or until done. To test: Insert knife 1 inch from edge. If it comes out clean pie is ready. Serve hot or cold.
