1/4 c. olive oil
1 onion, chopped
2 garlic cloves, chopped
1 celery stalk, chopped
1 carrot, chopped
1 lb. ground beef
28 oz. can Italian crushed tomatoes
8 fresh basil leaves, chiffonade
Salt and pepper
1/4 cup grated Peccorino Romano cheese

Directions:
Directions:
Heat olive oil in large pot. Add the onion and garlic and saute until the onions are very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise the heat to high and add ground beef, cooking for about 8 minutes. Add the tomatoes and basil and cook over medium low heat until sauce is slightly thick, about 30 minutes. Remove from heat and season with salt and pepper and finish with cheese.
