1 cup raw rice
1 pkg Lemon Jello
1 cup hot water
Medium can of Pineapple
12 oz container of Cool Whip©
Maraschino Cherries, cut in quarters
1 cup of small marshmallows
1/4 to 1/2 cup Coconut, optional

Directions:
Directions:
Cook rice according to directions.
Drain Pineapple, saving the juice.
Make lemon jello by adding one cup of hot water to dissolve. Add the pineapple juice to the jello.

When cool, mix in the rest of the ingredients.

You may serve this from a bowl or from a jello mold. If using a mold, grease the mold. When mixture is set, unmold to serve.
