1 cup sugar
1 cup water
¾ cup whipping cream

Directions:

In a heavy 3 quart saucepan, combine sugar and water. Heat to boiling over high heat, stirring to dissolve sugar. Continue boiling, without stirring, for 10 to 12 minutes or until syrup is light caramel or honey-colored. Stir occasionally near the end of cooking time to brown evenly. (Color will continue to darken.) Remove pan from heat. Slowly whisk in cream. Return pan to medium heat; cook and stir 1 to 2 minutes or until caramel and cream dissolves and mixture thickens slightly.
Serve caramel warm or at room temperature. Store, covered, in refrigerator up to 5 days. Sauce may be reheated in small saucepan, stirring constantly. Makes about 1 cup.
