4 Medium sized sweet potatoes
Butter (to taste)
A pinch of salt

Preheat oven to 425º
Scrub potatoes with warm water, pat dry.
Wrap each potato in aluminum foil and place on baking pan. When the oven is hot, place the pan on the center rack.
Bake 45-55 minutes or until potatoes feel squishy.

Let cool, and carefully peel foil off and watch out, they leak!! Serve with a pad of butter and a sprinkle of salt.

Gunnar absolutely loves these sweet potatoes. He thinks he's getting a sweet snack but little does he know he's eating a healthy vegetable! Prep. is quick and easy and they work great as a side dish!
