3 eggs
1 cup oil
2 teaspoons vanilla
3 cups uncooked grated zucchini
2 cups sugar or 1 cup sugar and 1 cup honey
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
3 teaspoons cinnamon
1/2 teaspoon nutmeg
1 cup chopped dates

Directions:
Directions:
Beat eggs until frothy and light. Add oil, vanilla, zucchini, and sugar to beaten eggs. Sift flour, baking soda, baking powder, salt, cinnamon, nutmeg, and add to mixture. Fold in dates. Pour into two greased or sprayed bread pans and bake at 325º for approximately 1 hour and 15 mins. Remove from pan immediately when cooked and cool on rack.
