1 medium potato
1 c. peanut butter
1 (1 lb.) box powdered sugar

Boil potato until done. Mash potato in a mixing bowl. Add powdered sugar and stir until it is a dough-like consistency. Roll out on waxed paper. Spread peanut butter on top of dough. Roll up jellyroll style and slice into 1/2 inch wide pieces.
