1 lb cooked shrimp
3/4 box of Uncle Ben's white or brown instant rice
1 red pepper
1 green pepper
1 yellow pepper
3 stalk of celery, chopped
Parsley chopped
Salt and pepper to taste

Directions:
Directions:
About one hour before serving, liberally shake a bottle of spicy Italian dressing on mixture. Mix well and then take a red cabbage and take off leaves leaving them whole. Put on place all around and put your shrimp mixture in them. Very pretty. Instead of red cabbage, you could also shred iceberg lettuce, put on plate with tomatoes surrounding the edges and put the shrimp mixture in the middle.
Chill
Serve with ice tea and breadsticks. Nice light dinner.
