Ingredients: Ingredients for the Crust:
1-1/2 packages OreoŽ cookies 1/2 stick butter, melted
Ingredients for the Mousse: 12 oz. chocolate chips Pinch of salt 1 tsp. vanilla 4-1/2 cups heavy cream, divided 1/2 cup sugar
Ingredients for the Raspberry Sauce:
1 cup raspberries, fresh or frozen Sugar to taste

Directions:Directions for the crust: Mix together ingredients in a food processor. Put mixture into a nine-inch spring-form pan. Bake at 350 degrees for about seven minutes.
Directions for the Mousse: In a food processor, mix chocolate, salt and vanilla. Bring one cup of the cream to a strong simmer. With the food processor running, add cream and continue to mix for 20 seconds. Pour contents into a bowl. In another bowl, whip remaining cream with sugar until stiff. Fold into chocolate mixture, then pour into spring-form pan, on top of the crust, and chill to set, about eight hours. Top with shaved chocolate and serve with raspberry sauce.
Preparation for the Raspberry Sauce:
Mash the raspberries and strain seeds out with a strainer. Add sugar to taste. Mix thoroughly and use to garnish cake.
