1 lg. pkg. instant vanilla pudding
marashino cherries, for garnish
20 oz. crushed pineapple, in syrup
1/2 c. coconut, for garnish
8 oz. sour cream
8 oz. cool whip, opt.
prepared 9" pie crust

Directions:
Directions:
In large bowl, combine the pudding mix, UNDRAINED pineapple, and sour cream. Mix until well blended. Pour mixture into pie crust. Frost w/ cool whip or decorate with pineapple slices and marschino cherries. Sprinkle coconut over all. Chill for at least 2 hours before serving.

You do not pre-pare the pudding, you use it dry. Also don`t use crushed pineapple "in its own juice", because it is not sweet enough. You may make your own homeade crust-this cookie crust is very easy; 1 stick melted butter, 1 c. flour and 1/4 c. powdered sugar. Combine and press into pie plate, bake 18-20 min. at 375, WATCH carefully so as not to burn it.
