3 T. milk
Salt & pepper to taste
Pam cooking spray

Beat eggs; add milk, salt & pepper. Spray skillet with Pam. Cook until firm. Place filling (cheese and chopped ham or crumbled bacon) in middle and fold both sides toward center. Wrap tightly with foil to keep moist. Bake at 350º for 20 - 25 minutes. Refrigerate overnight. Tomorrow omlette can be warmed in microwave (on plate with foil removed at Power 5). Serve.

These can be wrapped individually or can be placed side-by-side (to feed a family) in 9 x 13 pan and covered tightly to keep moist. They can be warmed one-at-a-time or all at once for tomorrow's breakfast.

I like to take them to a friend who's had a funeral in the family because most people don't think of taking breakfast food, and they're always appreciated.
