For a 5 pound piece of beef roast or brisket or pork roast or brisket prepare the following:

4 quarts water
1/2 pound brown sugar
2 tsp. salt
1/4 tsp. baking soda
1/2 tsp. pickling spices

Directions:
Directions:
Let the above ingredients come to a boil and simmer for about 6 mins. Cool completely. When cool, pour over meat. Cover tightly with crimped tinfoil and place in refrigerator for 10 days. It is then ready to be prepared in a meal.
