3 c. grated baby carrots
2 c. sugar
2 c. self rising flour
1 1/2 c. Canola oil
2 tsp ground cinnamon
4 eggs
1 c. chopped walnuts

Frosting:
1 8oz. package cream cheese
1 box 10x confectioner sugar
1 stick butter, softened to room temperature

Preheat oven to 300º. Mix all ingredients together and spread into a lightly greased and floured 9x13 glass baking pan. Bake for 1 hour. Allow cake to cool, leave in pan and frost.
