4 lb ground beef (maximum fat content. About 25%)
1/4 c. curing salt
2 T. liquid smoke
1 1/2 tsp. garlic powder
1 1/2 tsp. ground black pepper

Directions:
Directions:
Mix all ingredients thoroughly in large bowl. Cover and chill 24 hours.

Divide mixture into fourths. Shape into compact 8 inch logs and place on a 12x18" piece of nylon net or cheese cloth. Roll tightly. Tie ends with string. Place logs on broiler pan with rack and bake in a 225º oven 4 hours. Remove from oven and remove netting. Pat rolls well with paper towel to remove fat. Cool slightly, wrap in foil and refrigerate (or freeze).
