1 can cream of mushroom soup
1 1/3 cups water
3/4 cup brown rice, cooked
1/2 tsp. garlic salt (or onion powder)
1/4 tsp. ground black pepper
2 cups frozen mixed vegetables
4 chicken breasts

Directions:
Directions:
Preheat oven to 375º. In a mixing bowl, stir together soup, water, rice, garlic salt, pepper, and veggies. Pour in an 11x8" baking dish. Take chicken and rub with salt and pepper to taste. Place chicken on top of veggie mixture; cover. Bake for 50 minutes.
(I like to chop the raw chicken into bite-sized pieces and saute them in olive oil and garlic salt, then add to veggie mixture before baking. It allows the chicken flavor to marry with the casserole. But if pressed for time, chicken baked well on top:)
