Ingredients:  
1 package (6 oz.) of Uncle Ben's Original Long-grain and Wild Rice Mix
1 c sweetened dried cranberries (Craisins)
1 c fresh broccoli flowerets
4 green onions, chopped
3 celery ribs, thinly sliced
1/2 cup sweet and sour dressing (see note)
1/2 c dry roasted peanuts

Directions:
Directions:
Prepare rice according to the package directions; cool. Combine rice, cranberries, broccoli, green onions, and celery; add the dressing and mix together. Cover and chill for at least two hours. Stir in the peanuts just before serving.

Note: The following vinaigrette can be used instead of a commercial sweet and sour dressing,:
Mix 1/4 cup vegetable or olive oil, 2 tablespoons sugar, 2 tablespoons white wine vinegar, and 1/2 teaspoon salt. Which all together and refrigerate until ready to use.
