Apple Vanilla Galletes Recipe

vanilla custard:
1/2 tablespoon Salt
1/2 pound Sugar
1 3/4 ounces Cornstarch
1 Quart Milk
1/2 Tablespoon Vanilla
15 each Egg Yolks

1 pastry crust recipe

sliced apples
brown sugar to taste
1/2 lb. butter

To make vanilla filling:
Mix Salt, Sugar & Corn Starch together.
Mix Milk, Vanilla, & Egg Yolks together.
Combine both mixtures.
In a double boiler, slowly bring mixture to heat. STIR CONSTANTLY.
Cook until custard is thick and bubbling.
Pour into shallow pan, cover with plastic wrap right on top of custard, and refrigerate.

You MUST STIR this mixture CONSTANTLY to avoid lumping.

set aside, custard may be refrigerated before preparing galletes.

To prepare galletes:

place unbaked, square pastry on a cookie sheet, spoon in a healthy dollop of custard, add apple slices, a generous amount of butter, and brown sugar, fold corners of pie crust in and pinch at the top, its not supposed to be pretty. Bake at 350F until crust is a golden brown, serve with vanilla ice cream.
