1 Pound of Crawfish Tails
1 Bell Pepper, Chopped
1 Onion, Chopped
1 Clove of Garlic, Minced
3 Tablespoons of Roux, Wet
1 Teaspoon Bay Leaf
1 Quart of Water or a Little More
Seasonings to Taste

Directions:
Melt roux in heavy pot and add chopped onion, bell pepper and garlic to Sauté. ( about five minutes)
Add bay leaf, water and simmer for 2 hours. Add crawfish, seasonings and cook for another hour. Serve in large soup bowls over rice.
