frozen chicken tenders, thawed and cut into 2" pieces.

salt, pepper and onion salt

1 c. honey Dijon mustard
honey (optional)

Rice Chex© cereal, crushed
coconut flakes
instant potato flakes (optional)

MARINADE:
2 Tbsp. cooking wine (optional)
1/4 c. pineapple juice
1 Tbsp. Worcestershire sauce
1/2 c. orange juice

Directions:
Directions:
Place chicken in a container (a large Ziploc© bag or plastic container). Mix marinade ingredients and pour over chicken. Toss the chicken to cover in marinade. Refrigerate for at least 4 hours.

Drain chicken. Discard marinade. Season with salt, pepper and onion salt to taste. (I omit the onion salt.)

Dip chicken in mustard, (I add extra honey.)

Roll chicken in a mixture of cereal, coconut, and potato flakes.

Place on baking sheet sprayed with Pam.

Bake at 350º for 15 minutes.
