1 ham bone, or cut-up ham
1 c. tomato juice
3 qts. water
3 carrots, cut fine
1 lb. navy beans (dry)
3 sm. potaoes, diced
1 lg. onion
2 tsp. salt
1 c. chopped celery
1/2 tsp. pepper

Directions:
Directions:
Cook ham bone in water for 2 hours and remove bone. If no bone is available use cut-up ham and cook altogether. (I have also used a browned and cut-up smoked sausage. LW) . Add the rest of the ingredients and cook for 2 more hours. Mash if desired. That gives it the classic Bean Soup consistency.
