1 lb. frozen tater tots
1/2 lib diced turkey ham, or lean pre-cooked ham or Canadian bacon
1/2 C. chopped onions
1/2 C. diced green pepper
3/4 C. shredded fat-free cheddar cheese
6 eggs (or egg substitute to equal 6 eggs)
1/2 C. skim milk

Directions:
Directions:
In crock-pot, layer ingredients in this order: tater tots, ham, onions, green pepper and cheese.

Repeat 2 more times, ending with a layer of cheese.

In a separate bowl, mix eggs and milk.

Add salt and pepper to taste. (But if you use ham, it may be salty enough)

Pour egg mixture over the layers in the crock-pot.

Cover and cook on LOW for 10 - 12 hours.

Feel free to improvise and add other ingredients like mushrooms and green chilies.
