2 c. water
1/3 c. brown sugar, packed
1 c. dry oatmeal
1 TB. sugar
3 TB. butter or margarine
1 tsp. salt
2 1/2 tsp. dry yeast
4 3/4-5 1/4 c. flour
1/3 c. warm water

Directions:
In sauce pan, bring 2 c. water to boil. Add oatmeal and butter. Cook and stir 1 minute. Cool to lukewarm. In large bowl, dissolve yeast in 1/3c. warm water. Add to cooled oats mixture, sugars, salt and 4 cups flour. Beat until smooth. Add enough remaining flour to form a soft dough. Turn onto floured surface; knead 6 to 8 minutes, kneading in more flour until smooth and elastic. Place in greased bowl, turning once to grease top. Cover and let rise in warm place until doubled about 1 hour. Punch down. Let rest 10 minutes. Shape into 18 balls and place in greased round cake pan (I used two cake pans). Cover. Let rise until doubled about 45 minutes. Bake @ 350º for 20-25 minutes, until golden brown. Remove from pan to wire rack to cool.
