Gumbo, Chicken and Sausage Recipe

1 Onion, Chopped
1 Green Bell Pepper, Chopped
1 Cup of Chopped Celery
1 Pound Sausage, Sliced
1 Whole Chicken, Cut Into Pieces
1 Cup Cooking Oil
1 Cup Flour
2 Quarts Warm Water
2 Teaspoons Tabasco Sauce
1 Tablespoon Tony's Chachere
2 Cups Okra, Cleaned and Sliced
3 to 4 Cups Rice

In a 6 or 8 quart stock pot mix 1 cup of oil and 1 cup of flour. Place over medium heat and stir continuously until color turns medium to dark brown. This takes 10 to 15 minutes.

At this point, add the onion, celery and bell pepper and cook till the onion starts to clear.

Stir in warm water and chicken. Simmer about an hour add seasonings and sauasage. Add more water as neededs. Bring a simmer and cook until chicken is done.

Prepare rice and serve over rice in a bowl. Salt and pepper to taste.
