1 3/4 c. all-purpose flour
1/3 c. plus 2 tbsp. sugar, divided
2 tsp. baking powder
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 egg, beaten
3/4 c. milk
1 tsp. vanilla
1/4 c. cooking oil
1/2 c. apple butter
1/2 c. chopped pecans

Directions:

Preheat oven to 400º. combine flour, 1/3 c. sugar, baking powder, cinnamon, nutmeg, and salt on a large mixing bowl; set aside. Blend egg, milk, vanilla, and oil together; mix into flour mixture. Spoon about one tablespoon batter into paper line muffin cup; add one tsp. apple butter. fill muffin cups 2/3 full with remaining batter; set aside. Toss pecans with remaining sugar; sprinkle evenly on tops of muffins. Bake about 20 minutes, or until toothpick inserted into muffin comes out clean.
