1 Pound of Boneless, Skinless Chicken, Cut Into Small Pieces
2 Cups of Rice
1/2 Medium Size Onion, Chopped
2 Ounces of Tomato Paste
Salt, Pepper, Cumin Seed Powder, Chile Powder, Garlic Power

Directions:
Directions:
In a large frying pan or skillet, Sauté tomato, onion and pepper in olive oil. When onions are translucent, add pieces of chicken and cook for 5-8 minutes.
Add tablespoon oil and lightly brown 2 cups of rice. When rice is browned, add 4 cups of water. Mix chicken and rice to evenly distribute. Add salt, pepper, cumin, chile powder, and garlic power to taste. Cover skillet and let steam for 15 to 17 minutes. Once covered – do not uncover or stir rice. You can uncover rice around the 15 minute point to see if water is all evaporated.
