4 lbs sirloin tip roast
flour
1 medium onion sliced thinly
2 cloves garlic, minced finely
1 bay leaf
1/2 cup hot water
3 carrots, cut in 1-1/2 pieces
5 small potatoes, peeled

Directions:
Directions:
Sprinkle meat lightly with flour and rub into meat. Brown slowly on all sides in a little preheated oil in a heavy Dutch oven. Season with 2 teaspoons salt and 1/2 teaspoon pepper. Add sliced onions, bay leaf, garlic, and water. Cover and cook in 350º oven for about 1-1/2 hrs. or until almost tender. Add vegetables and sprinkle them with salt. Recover and cook for another hr. or until meat and vegetables are tender. If you would like the pot roast gravy thickened, use one can beef broth and add 1/4 cup flour, stir into smooth paste and add to the roast beef juice, after you have removed the meat and vegetables to a platter. Pour gravy mixture into pot roast juice and stirring constantly until it is a smooth gravy. If mixture is too thick add a little hot water to think it.
