2 lbs lean ground beef
or mixture of beef and pork
1 large chopped onion
1 large grated carrot
salt/pepper
3 ears of fresh corn
butter
8 cups mashed potatoes
3 cups cheddar or American cheese
1 tsp cumin
paprika

Directions:
Directions:
Brown ground beef (or mixture of beef and pork) in a heavy skillet, with cumin, stirring to keep crumbly. Stir in onions and carrot and cook until tender. Season with salt and pepper. Turn mixture into a colander lined with paper towels to drain as much grease as possible. Set aside.

Steam ears of corn until tender. When corn is cool enough to handle, cut kernels from cob and set aside.

Lightly butter the bottom and sides of a 9x13" baking dish. Add 2 cups mashed potatoes and press to form bottom "crust". Add drained meat mixture and spread over potatoes. Add a layer of cheese and top with corn kernels.

Cover with remaining 6 cups mashed potatoes. Sprinkle on any remaining cheeses and lightly dust with paprika.

Bake at 350º for 35-45 minutes. If desired, place under broiler to form a crisp topping. Let stand 15 minutes before serving.
