Peel and slice apples relatively thin. After I've peeled 2-3" of apples in a stockpot I sprinkle them with sugar. I repeat this until I have peeled the desired amount of apples. I don't start cooking the apples until I am just about finished slicing all the apples so they all cook basically the same amount of time. At first I keep the heat very low to prevent burning. Once the sugar has melted and some of the juice from the apples has accumulated at the bottom of the pot I will increase the heat, never above a med. heat. Stir the apples frequently, especially early in the cooking process. Once the apples have cooked a while, taste them to see if sugar needs to be added. The amount of sugar you use will depend on the amount of apples you use, their sweetness and your personal taste. Cinnamon may also be added to taste.
