8 oz New York Steaks
1 T crushed pepper corns
1 T olive oil
1 T butter
1 T paprika
3 chopped green onions
1 cup sliced mushrooms
3 crushed cloves garlic
1/4 cup cognac
1/2 cup heavy cream
salt to taste

Directions:
Directions:
Pound pepper corns into steak. Heat oil in heavy skillet until very hot. Saute both sides of the steak. Remove to warm platter and keep warm.

Add butter and paprika to skillet and stir for one minute. Add green onions and mushrooms. Cook for 2 minutes - stir occasionally. Add garlic and cognac and heavy cream.

Simmer 4 minutes and pour over steak.
