5 lbs potatoes-cooked, pealed and cubed OR a 4lb bag of frozen hash-browns
1/4 cup butter
1 med. onion(chopped)
2 cans Cream of Mushroom soup
1 pint sour cream
2 cups shredded cheese
Salt and pepper to taste

Directions:
Directions:
Saute the onion in the butter until onion is clear. Add soup, sour cream and seasoning. Mix with potatoes and half of the cheese.(you might need to add a little milk, depending on the moisture of the potatoes) Place in large casserole dish and top with the rest of the cheese. Cover and bake at 350º for 1 hour.

This is a great side dish with ham or chicken etc. Sometimes I add hamburger or ham to make it a main dish.
