10-12 lb. potatoes (1/8-1/4" slices)
3 green peppers, diced (optional)-I didn't use
4 TB dehydrated minced onions
3 cans cream of mushroom soup
3 cups half & half or whole milk-I used half & half
salt & pepper

Directions:
Directions:
LAYER INGREDIENTS (I used 4 layers) in a 6 qt. Dutch oven.
Arrange thinly sliced potatoes. Sprinkle with salt and pepper, green pepper and minced onion. Mix the soup and half & half OR milk and pour over potatoes.* Cover and bake for 2 - 2 1/2 hours (checking after 2 hours) or until casserole is bubbling, potatoes are cooked and sauce is thickened.
*Casserole can be made to this point several hours in advance; place in refrigerator.
Bake at 350º.

For those of you that do not like mushrooms, they really can't be tasted. Heather doesn't like mushrooms, but liked this recipe.
